Whipped Cottage Cheese Dip

Ingredients

For the dip:

  • 16 ounces cottage cheese

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon fresh lemon juice

  • 1 small garlic clove

  • 1/4 teaspoon sea salt

For topping & serving:

  • chili oil*

  • honey

  • chopped pistachios

  • red pepper flakes

  • lemon zest

  • pita chips & veggies, for serving

Instructions

  • In a food processor, place the cottage cheese, olive oil, lemon juice, garlic, and salt. Pulse until creamy.

  • Transfer to a serving dish and top with a drizzle of chile oil, honey, and sprinkle with pistachios, red pepper flakes, and lemon zest.

  • Make your own chili oil by heating extra-virgin olive oil with pinches of chili flakes over low heat for 30 seconds, or until fragrant. Let cool before using.
