Whipped Cottage Cheese Dip
Ingredients
For the dip:
16 ounces cottage cheese
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1 small garlic clove
1/4 teaspoon sea salt
For topping & serving:
chili oil*
honey
chopped pistachios
red pepper flakes
lemon zest
pita chips & veggies, for serving
Instructions
In a food processor, place the cottage cheese, olive oil, lemon juice, garlic, and salt. Pulse until creamy.
Transfer to a serving dish and top with a drizzle of chile oil, honey, and sprinkle with pistachios, red pepper flakes, and lemon zest.
Make your own chili oil by heating extra-virgin olive oil with pinches of chili flakes over low heat for 30 seconds, or until fragrant. Let cool before using.
