Tomato & Basil Quinoa

Ingredients:

  • 🍅 2 cups Cherry Tomatoes (cut in half)

  • 🍚 1 cup Quinoa (uncooked)

  • 💧 2 cups Water

  • 2 tbsp Thyme (chopped)

  • 🌿 10 Basil Leaves

  • 🧅 1 cup White Onion

  • 🧄 4 cloves Garlic

  • 🍋 1/4 cup Lemon Juice

Instructions:

  • Preheat the oven to 400°F and line a baking sheet with parchment paper. Cook for 10 minutes. Remove, flip the tomatoes and place back in the oven for 12 to 15 minutes.

  • 2. Meanwhile, combine quinoa and water together in a saucepan. Place over high heat and bring to a boil. Once boiling, reduce heat to a simmer and cover with a lid. Let it simmer for 13 to 15 minutes or until the water is absorbed.

  • 3. Add the quinoa to a large bowl along with the tomatoes, thyme, onion, basil and garlic. Add the lemon juice. Serve and enjoy! 😋
