Sonya's Tasty Merguez Sausage and Quinoa Salad

Ingredients:

  • 2 carrots

  • 1 small zucchini

  • 1 small yellow squash

  • 1/2 red onion

  • 1C Eggplant

  • 4 garlic pieces

  • olive oil

  • oregano

  • salt

  • tomato

  • Merguez spicy lamb sausage

  • Quinoa

  • lemon juice

  • feta cheese

  • fresh mint

Instructions:

  • Cut veggies about 1/4 inch thick :

    2 carrots

    1 small zucchini

    1 small yellow squash

    1/2 red onion

    1C Eggplant

    4 garlic pieces cut in half

  • Place it all on a Baking sheet Drizzle with olive oil, oregano, and Salt, bake @ 400 for :25 min

  • Cut 1 large ripe tomato in half, and place on a separate baking sheet. Cover with Italian spices (broil on top rack of oven for about :5) so this step as soon as other veggies are finished.

  • Place Merguez spicy lamb sausage in pan to start cooking while tomatoes are in the oven and you’re cooking Quinoa.

  • While veggies bake or broil in the oven, cook Quinoa: 1 3/4C. water or beef stock. 1 C quinoa in a pan. Bring to boil, reduce heat to simmer and cover to cook :30 min. Take off the heat and keep covered for :10min more.

  • When Quinoa is finished place it in a large bowl, and add the baked mixed vegetables. Then, zest of 1 lemon rind on top and squeeze 1/2 lemon juice,

    Mix and crumble about 4 oz or 1/2C of feta cheese in a bowl along with plenty of fresh mint whole or cut. Then mix it all Together.

  • Add 1C of your Quinoa vegetable mixture into each bowl, top with 1/4 sliced avocado, and place 2 sausages in each bowl.
