Slow-Cooker Kale & Sausage Stew
Ingredients:
1 (28 ounce) can no-salt-added diced tomatoes
13 ounces turkey kielbasa, sliced (1/4-inch)
2 medium carrots, thinly sliced (1/8-inch)
2 medium potatoes, scrubbed and cubed (1-inch)
½ medium onion, diced
½ cup low-sodium chicken broth
2 cloves garlic, minced
2 tablespoons extra-virgin olive oil
2 tablespoons tomato paste
½ teaspoon dried oregano
½ teaspoon smoked paprika
¼ teaspoon ground cumin
4 cups chopped Tuscan kale
Juice of 1/2 lemon
¼ cup finely chopped fresh flat-leaf parsley
Instructions:
Combine tomatoes, sausage, carrots, potatoes, onion, broth, garlic, oil, tomato paste, oregano, paprika and cumin in a 3 1/2-quart slow cooker. Cover and cook on High for 4 hours. Stir in kale. Cover and cook until the kale is tender, 10 to 15 minutes. Stir in lemon juice and top with parsley.
