Slow-Cooker Kale & Sausage Stew

Ingredients:

  • 1 (28 ounce) can no-salt-added diced tomatoes

  • 13 ounces turkey kielbasa, sliced (1/4-inch)

  • 2 medium carrots, thinly sliced (1/8-inch)

  • 2 medium potatoes, scrubbed and cubed (1-inch)

  • ½ medium onion, diced

  • ½ cup low-sodium chicken broth

  • 2 cloves garlic, minced

  • 2 tablespoons extra-virgin olive oil

  • 2 tablespoons tomato paste

  • ½ teaspoon dried oregano

  • ½ teaspoon smoked paprika

  • ¼ teaspoon ground cumin

  • 4 cups chopped Tuscan kale

  • Juice of 1/2 lemon

  • ¼ cup finely chopped fresh flat-leaf parsley

Instructions:

  • Combine tomatoes, sausage, carrots, potatoes, onion, broth, garlic, oil, tomato paste, oregano, paprika and cumin in a 3 1/2-quart slow cooker. Cover and cook on High for 4 hours. Stir in kale. Cover and cook until the kale is tender, 10 to 15 minutes. Stir in lemon juice and top with parsley.
