One Pot Three Bean Quinoa Chili

Ingredients:

  • 1 1/2 cups veggie broth, no oil/low sodium (divided)

  • 1/2 cup Red Onion (finely chopped)

  • 4 Garlic (clove, minced)

  • 2/3 cup Diced Tomatoes (from the can with juices)

  • 1 1/3 tbsps Tomato Paste

  • 1/2 cup Quinoa (dry)

  • 1/2 cup Red Kidney Beans (from the can, rinsed well)

  • 1/2 cup Pinto Beans

  • 1/2 cup Chickpeas

  • 1 1/3 tbsps Chili Powder

  • 1/2 tsp Black Pepper

  • 1 tsp Cumin

  • 1 tsp Garlic Powder

    Instructions:

  • In a pot, heat 3 Tbsp vegetable broth over medium-high heat, and then sauté the onion and garlic until soft.

  • Add the remaining vegetable broth, diced tomatoes, and tomato paste, and bring to a boil.

  • Add the quinoa and cook at a simmer for 15 minutes.

  • Add the kidney beans, pinto beans, and chickpeas, then stir in the chili powder, black pepper, cumin, and garlic powder. Continue cooking until all the ingredients are heated, about 5 to 8 minutes.

  • Transfer to a bowl and enjoy!
    Tip: If you want even more punch to this dish, add some peppers or other dried herbs and spices to taste, like coriander, oregano, red pepper flakes, and/or cayenne pepper. 🌶️
