One Pot Three Bean Quinoa Chili
Ingredients:
1 1/2 cups veggie broth, no oil/low sodium (divided)
1/2 cup Red Onion (finely chopped)
4 Garlic (clove, minced)
2/3 cup Diced Tomatoes (from the can with juices)
1 1/3 tbsps Tomato Paste
1/2 cup Quinoa (dry)
1/2 cup Red Kidney Beans (from the can, rinsed well)
1/2 cup Pinto Beans
1/2 cup Chickpeas
1 1/3 tbsps Chili Powder
1/2 tsp Black Pepper
1 tsp Cumin
1 tsp Garlic Powder
Instructions:
In a pot, heat 3 Tbsp vegetable broth over medium-high heat, and then sauté the onion and garlic until soft.
Add the remaining vegetable broth, diced tomatoes, and tomato paste, and bring to a boil.
Add the quinoa and cook at a simmer for 15 minutes.
Add the kidney beans, pinto beans, and chickpeas, then stir in the chili powder, black pepper, cumin, and garlic powder. Continue cooking until all the ingredients are heated, about 5 to 8 minutes.
Transfer to a bowl and enjoy!
Tip: If you want even more punch to this dish, add some peppers or other dried herbs and spices to taste, like coriander, oregano, red pepper flakes, and/or cayenne pepper. 🌶️
