One Pan Mediterranean Rice

Ingredients:

  • 1 cup rice

  • 1 can butter beans rinsed and drained

  • 1 tbsp minced garlic

  • 1 cup sliced italian olives

  • 1 cup sliced cherry tomatoes

  • 1 cup chopped sundried tomatoes

  • 2 cups chopped spinach

  • 1 10oz jar marinated artichoke hearts

  • Parsley for garnish

  • 1/2 lemon juiced

  • 1/2 cup coconut milk

  • 2.5-3 cups water

  • 1 tsp salt

  • 1/4 tsp pepper

  • Garnish: vegan feta + parsley

    Instructions:

  • Mix all together in a casserole dish making sure the rice is covered well. Bake for 40 min or until rice is cooked at 400 F.

  • Garnish with vegan feta and parsley!
