Mango Mama Salad
Ingredients:
2 cups chopped kale
2 cups cubed mango
1 cup diced avocado
2 cups diced cucumber
1/2 cup diced red onion
1 cup diced bell pepper
1 cup corn
Creamy Cilantro Dressing
1/2 cup raw cashews
1/3 cup avocado oil
1 head cilantro
1/4 cup lime juice
3 tbsp water
1 tsp salt
1 tsp garlic
Instructions:
Chop + dice all veggies and mango.
Use frozen or fresh corn and steam in microwave for 3 minutes.
Add all veggies into a large salad bowl.
Dressing: Blend all dressing ingredients in high-speed blender until smooth. Pour over salad, toss and enjoy!
