Lemon & Ginger Tea
Ingredients:
4 tablespoons grated ginger (about one 4-inch piece, peeled, and grated on the largest holes of a coarse box grater)
1 large lemon sliced into thin rounds, then cut into 8 small triangles per round
Agave or maple syrup to taste
Instructions:
Simmer and steep ginger: Place the grated ginger into a small saucepan with 3 cups water. Bring to a simmer. Reduce the heat to low and simmer for 10 minutes uncovered. Remove from the heat and let sit for 5 minutes.
Strain the water using a tea strainer. Transfer to ice cube trays. Add about 5 lemon triangles to each cube.
Freeze overnight. Good for up to 3 months.
For serving: Add one to two cubes to a mug or an insulated bottle with the desired amount of hot water. Enjoy warm or chilled.
