Insalata di Patate Siciliana

Ingredients:

  • 2 lb. Potatoes (I used Yukon gold)

  • 1 cup cherry tomatoes

  • 1/3 pound fresh green beans

  • 1/2 large red onion

  • 1/2 cup olives

  • 2 tbsp capers

  • 1 tbsp Sicilian oregano

  • Salt and pepper to taste

  • 1/4 cup olive oil

  • 3 tbsp white wine vinegar

Instructions:

  • Boil the potatoes with their skins on, then peel and cube them after cooling under cold water.

  • Cook the green beans briefly and add them to the potatoes. Throw in cherry tomatoes, sliced red onions, olives, and capers.

  • Season with salt, pepper, and Sicilian oregano. Finish with a drizzle of olive oil and white wine vinegar, mix well!

  • Tip: this can be made ahead of time and kept cool in the refrigerator until serving!
