Insalata di Patate Siciliana
Ingredients:
2 lb. Potatoes (I used Yukon gold)
1 cup cherry tomatoes
1/3 pound fresh green beans
1/2 large red onion
1/2 cup olives
2 tbsp capers
1 tbsp Sicilian oregano
Salt and pepper to taste
1/4 cup olive oil
3 tbsp white wine vinegar
Instructions:
Boil the potatoes with their skins on, then peel and cube them after cooling under cold water.
Cook the green beans briefly and add them to the potatoes. Throw in cherry tomatoes, sliced red onions, olives, and capers.
Season with salt, pepper, and Sicilian oregano. Finish with a drizzle of olive oil and white wine vinegar, mix well!
Tip: this can be made ahead of time and kept cool in the refrigerator until serving!
