Herby Quinoa and Lentil Salad

Ingredients:

Salad Base

  • 1/2 cup green lentils (cook according to package)

  • 1/2 cup tricolor quinoa (cook according to package)

  • 1/4 cup finely chopped parsley

  • 1/4 cup finely chopped mint

  • 1/4 cup chopped roasted pistachios

  • 1 cup cooked beets chopped

    *for extra flavor I love cooking my lentils and quinoa in broth or add a tbsp of bullion to the water while it boils*

    Dressing

  • 3 tbsp extra virgin olive oil

  • 2 tbsp pure maple syrup

  • dash of cumin to taste

  • dash of coriander to taste

  • 1/2 lemon juice

  • 1 lemon zest

  • 1 tsp Dijon mustard

  • salt to taste

    Instructions:

  • Cook your quinoa and lentils separately according to box. I love to cook them in broth or add a tbsp of bullion to the water while it boils for extra flavor! One cooked, add to a bowl and add your finely chopped herbs (mint and parsley), pistachios, and beets. Toss everything with your dressing and enjoy!
