Easy Wonton Soup

Ingredients:

  • 1 tsp Olive Oil

  • 1" Piece Ginger (~1 Tbsp), sliced in thin strips

  • 2 Cloves Garlic, minced

  • 3 Scallions, sliced

  • 8 Cups Chicken Broth

  • 5 Shiitake Mushrooms, sliced

  • 1 x 8 oz. Can Sliced Water Chestnuts, drained

  • 1 x 8 oz. Can Bamboo Shoots, drained

  • 2 Tbsp Soy Sauce

  • 1 Tbsp Sesame Oil

  • 1+1/2 - 2 tsp Kosher Salt (to taste)

  • 1/4 tsp Pepper

  • 2-3 Baby Bok Choy, cut in quarters

  • 2 Tbsp Cornstarch

  • 1/2 lb. Shrimp, peeled and tail removed, cut in half

  • 1 Package Trader Joe's Chicken Cilantro Mini Wontons

Instructions:

  • In a large pot, sauté the ginger, garlic, and scallions in olive oil until fragrant (2-3 min)

  • Add the chicken broth, shiitake mushrooms, water chestnuts, bamboo shoots, soy sauce, sesame oil, salt, pepper, and baby bok choy; bring to a boil and then turn heat to low and simmer for ~5 mins

  • Add the shrimp and corn starch mixed with 1/4 cup water (this will thicken the broth slightly) and bring back to a boil

  • Add the wontons and boil for ~4 min until heated through; taste and add more salt, pepper, or soy sauce if the broth needs more flavor - enjoy!
