Easy Berry Salad Recipe with Arugula and Burrata
Ingredients:
6 oz baby arugula
1 small shallot halved and sliced
6 oz fresh blackberries
6 oz fresh raspberries
6 oz fresh strawberries
4 oz Burrata cheese
For Dressing
3 tablespoon extra virgin olive oil
1 large lemon, juice of
kosher salt and black pepper
Instructions:
Make the dressing. Place extra virgin olive oil, lemon juice, salt and pepper in a small bowl. Whisk to combine.
In a large mixing bowl, add the arugula, shallots, and berries (all three berry varieties). Pour the dressing on top and gently toss.
Transfer the berry salad to a serving platter and arrange burrrata cheese on top. Enjoy!
Notes:
Prepare ahead instructions: This salad is best enjoyed right away, but you can arrange it a little bit ahead and keep it covered in the fridge. Do not dress the salad and do not add the burrata cheese until ready to serve.
