Black Bean Brownies

Ingredients:

  • 1 15-ounce can black beans, drained and rinsed

  • 3 large eggs

  • 3/4 cup granulated sugar

  • 1/2 cup unsweetened cocoa powder

  • 1/4 cup unsalted butter, melted

  • 1 tablespoon ground cinnamon

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon table salt

  • 1/2 cup chocolate chips

Instructions:

  • Preheat oven to 350°F. Place parchment paper in 8×8 baking dish and set aside.

  • Place all ingredients except chocolate chips in blender and blend until smooth.

  • Pour and scrape batter evenly into the baking dish.

  • Top batter with chocolate chips.

  • Bake in oven for 25 to 30 minutes.

  • Let cool for 30 minutes before slicing and serving.
